- Frozen vegetables are an easy way to add more veggies in your diet. Stash a bag in the fridge, to add to soups and dishes each time you cook dinner.
- Steam vegetables in a clear broth such as chicken stock or vegetable broth.
- Try roasting or grilling your veggies for a unique flavor! Because veggies are mostly water, they lose volume when they're roasted, so "forkful by forkful, you will eat more vegetables when they have been roasted," explains Andrea Chesman, author of The Roasted Vegetable.
- Toss leftover vegetables into homemade soup or stew, or try adding pureed veggies to thicken a soup or sauce.
- Serve a salad of vegetables and fruits with dinner. Go easy on the high-fat dressing.
